Chicken Xacuti


Serves  2-3

Preperation Time  30 Minutes

Contents
Chicken

Ingredients
800 gms of chicken
2 medium sized onions
1 cup of grated coconut
2 one inch sticks of cinnamon
6 cloves
4 dry red chillies
� tsp of turmeric powder

2 tblspns of poppy seeds (khus khus)
1 tspn of carom seeds (ajwain)
1 tspn of cumin seeds
1 tspn of peppercorns
1 tspn of fennel seeds (saunf)
4 Star anise (phoolchakri/badiyan)
1 � tblspns of coriander seeds
4-6 cloves of garlic
1/3 cup groundnut oil
Salt to taste
1 tblspn of tamarind pulp
� tspn of grated nutmeg

Recipe
1. Wash, clean, remove the skin and cut chicken into twelve pieces. The size of the pieces used is normally a little smaller than the one used for chicken curry.

2. Peel and chop the onions.

3. Heat a little oil and slightly brown the grated coconut and keep aside.

4. Now dry roast cinnamon, cloves, red chillies, turmeric, khus khus, ajwain, cumin seeds, peppercorns, fennel seeds, star anise and coriander seeds till a nice aroma is given out. Grind to a paste together with garlic and coconut.

5. Heat the remaining oil in a thick-bottomed pan and saut� the finely chopped onions till brown.

6. Add the masala paste and cook till oil separates. Add the chicken pieces and saute for sometime. Add two cups of water and salt, bring to a boil and add tamarind pulp and grated nutmeg.

7. Simmer for five minutes and serve hot with Goan pav or Goan rice.Serves  2-3

Pengertian Soup


Sup merupakan makanan cair yang terbuat dari kaldu (stock ) daging, ayam,ikan dan ditambahkan bahan-bahan pengaroma, bumbu-bumbu dan isian. Sup dapat  berdiri sebagai  hidangan yang dikaitkan dengan  giliran  hidangan  atau  sebagai appetizer  dan dapat merupakan hidangan yang berdiri sendiri atau sebagai maincourse/main dish.
Cream Soup Jamur
Bahan:

  • 200 g fillet ayam, rebus, potong dadu
  • 200 g jamur kancing kaleng, iris tipis
  • 250 g krim kental
  • 1 butir kuning telur
  • 800 ml kaldu ayam
  • 2 sdm mentega/ margarin
  • 1 sdm tepung terigu
  • 50 g keju cheddar, parut
  • 2 batang seledri cincang/daun dill cincang
Bumbu:
  • 100 g bawang bombay, cincang
  • 1 batang daun bawang, potong-potong
  • 2 batang selederi besar, potong
  • 2 batang daun thyme
  • 2 lembar bayleaf
  • ½ sdt merica bubuk
  • 1 sdt garam halus
Cara membuat:
  • Bungkus bawang bombai, selederi, thyme, bayleaf dan daun bawang dengan kain tipis (kain kasa), ikat dengan benang kasur.
  • Masukkan ke dalam kaldu. Didihkan kaldu, angkat bungkusan bumbu. Sisihkan kaldunya.
  • Kocok kuning telur dan krim kental, tuang sedikit air, aduk rata. Campurkan ke dalam kaldu. Sisihkan.
  • Panaskan margarin, masukkan tepung terigu, aduk rata. Tuang kaldu, jamur, potongan ayam, lada dan garam.
  • Masak hingga mendidih dan semua bahan matang. Angkat.
  • Tuang sup panas ke dalam mangkuk saji. Taburi keju parut dan daun seledri/dill cincang. Hidangkan hangat.
    Cream Soup Pasta Brokoli
    Bahan :
    • 200 gram brokoli, potong perkuntum, rebus matang
    • 150 gram pasta fusili, rebus matang
    • 500 ml susu cair
    • 1 siung bawang putih, cincang halus
    • 1/2 buah bawang bombay, cincang halus
    • 1 sdm tepung terigu
    • 2 lembar bay leaf
    • 1 sdm margarin
    • garam dan gula pasir secukupnya
    Cara Membuat:
    • Panaskan margarin, tumis bawang bombay, bawang putih, dan bay leaf hingga harum.
    • Masukkan tepung terigu, aduk hingga rata. Tuang susu cair, masak hingga mendidih.
    • Masukkan pasta fusili dan brokoli, aduk rata. Angkat dan sajikan
